Super Simple Garden Recipes: Tomato, Cucumber & Sweet Bell Pepper Salad

Ingredients:
1 slicer tomato, diced
1 ripe sweet bell pepper, diced
1 cucumber (or a few mini cukes), diced
1 clove garlic, minced (optional and/or can put in the dressing)
about 2 Tablespoons red onion, diced (optional and/or can put in the dressing)
Dressing:
3 parts extra virgin olive oil to 1 part citrus juice or vinegar
fresh herbs of your choosing (we used a few sprigs of thyme and a handful of Genovese basil)
a few pinches salt and a few grinds of pepper, to taste
Instructions:
Wash your hands and then harvest and rinse vegetables and herbs.
2. Prepare vegetables (diced or minced as noted above) and place them in a medium bowl.
3. Measure oil and citrus (or vinegar) into a jar.
1/4 cup citrus juice and 3/4 cup oil will give you some extra dressing for other recipes if kept in the fridge. If you don’t care to have extra dressing, stick to 1 Tbsp citrus juice & 3 Tbsp EVOO or 2 Tbsp citrus juice & 1/4 cup + 2 Tbsp EVOO.
4. Mince herbs and add to jar along with salt and pepper. Secure lid onto jar and shake vigorously.
5. Slowly pour dressing onto prepared vegetables and stir just until they are all lightly coated.
6. Enjoy as a snack, side dish or even use as a garnish like a salsa!
