Super Simple Garden Recipes: Chard and Sausage

Shared by BUG Gardener Geri!

Try prepping ingredients ahead of time and store in the fridge to use in multiple meals over a few days. You could wash and chop greens, dice an onion, mince some garlic, and pre-cook sausage. This makes for extra speedy meal creation on busy weeknights, when you just aren’t feeling like cooking, or even for breakfast!

Ingredients:

  • A few chard leaves, cut into ribbons or ripped into small pieces

  • A splash of extra virgin olive oil

  • Diced onion, a pinch (or more if desired)

  • Garlic, to taste

  • Sausage, to taste

  • Herbs, to taste

Instructions:

  1. Heat oil in pan and cook onions until translucent. Add garlic and cook until fragrant.

  2. Add sausage. Cook until it has reached safe internal temperature, or reheat pre-cooked sausage.

  3. Add chard and herbs and cook until greens are slightly wilted. Try adding a splash of water to steam them a little bit in the pan.

  4. Enjoy! You could add to pasta, garnish with some parmesan cheese, and/or add a fried egg on top!
